Lamb and the Cretan Bowl Diet…

Lamb is the key meat used by the Cretans and Greeks in general. And it is simply delicious either barbequed, spit roasted or baked in casseroles like Kleftiko. Lamb is available in a wide variety of cuts ranging in texture, tenderness and fat content, making Lamb a very versatile food.

Lean Lamb provides a very good source of protein and Vitamin B12.

Vitamin B12 is important for metabolism. It helps in the formation of red blood cells and in the maintenance of the central nervous system.

Lamb is also a good source of Vitamin B3.

Lamb is also a good source of Phosphorous, Selenium and Zinc. Phosphorus, in conjunction with calcium, is necessary for the formation of bones and teeth and of the nerve cells.

Phosphorus is second to calcium in abundance in the body.

Selenium is a part of several enzymes necessary for proper body function. In general, selenium chief function is as an antioxidant working in conjunction with vitamin E.

Zinc is an important mineral in a number of functions, ranging from protein and carbohydrate metabolism to the immune system, wound healing, growth and vision.

Severe deficiency can contribute to stunted growth. Deficiency can sometimes be seen in white spots on the fingernails.
