Recipe for Souvlaki
The following diet recipe of Souvlaki is based on servings for two. When following the Cretan Bowl Diet you can either share the meal with a spouse, partner or friend or eat one portion and freeze the other for yourself to eat at a later date. Or you can adjust the quantities for a family meal.

Ingredients
Half a lemon, juiced
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon dried oregano
3 cloves garlic, crushed
350g (12oz) pork tenderloin, cut into 2cm (one inch) cubes
1 medium onion cut into 2cm (one inch) pieces
1 green pepper cut into 2cm (one inch) pieces

Method
In a large bowl, mix together lemon juice, olive oil, wine vinegar, oregano, and garlic. Add the pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers. Lightly oil a roasting tin. Cook for 10 to 15 minutes turning skewers frequently for even cooking.
Serve with a green salad dressed with olive oil and lemon juice.
