Recipe for Stifado
The following diet recipe of Stifado is based on servings for two. When following the Cretan Bowl Diet you can either share the meal with a spouse, partner or friend or eat one portion and freeze the other for yourself to eat at a later date. Or you can adjust the quantities for a family meal.
 RECIPE FOR STIFADO |

 EAT STIFADO ON THIS WEIGHT LOSS DIET |
Ingredients
2 tablespoons olive oil
12 oz (350g) cubed lean beef stewing steak or rabbit
3 roughly chopped onions or 12 whole shallots
3 finely chopped garlic cloves
3 large chopped tomatoes
250ml water
2 tablespoons red wine vinegar
2 glasses red wine
1 teaspoon dried oregano
1 bay leaf
Half cinnamon stick
Small pinch ground cloves
Salt
12-15 whole black pepper corns
Method
Heat the oil in a large casserole dish over medium-high heat and brown the beef. Remove browned beef from dish and set aside. Turn the heat to low and sauté the chopped onion. When onion is translucent add the garlic and oregano and cook for a couple of minutes until fragrant. Return the beef to the dish and pour in the red wine to deglaze the bottom of the pan. Add the rest of the ingredients.
Bring up to the boil and put the lid on. Place casserole in a pre-heated oven at around 140C for two to three hours dependent on amounts used. Check and stir occasionally, adding water if necessary.
Serve with baked carrots and cabbage…
Ingredients
2 medium carrots per person
¼ Medium sized cabbage
Drizzle of olive oil
Salt and pepper
Method
Peel, but leave whole, 2 medium carrots per person, (cut lengthwise if very thick). Double wrap tightly in tin foil and place in same oven as the Stifado for the last 1½ hours of cooking.
Similarly with the cabbage, slice thinly about quarter of an average sized cabbage per person and place in foil, season with salt and pepper and drizzle with olive oil and bake for 1½ hours.
